General

What are the differences between Stainless Steel, Non-Stick, Ceramic & Nitrided cookware?
• Stainless Steel: Durable and excellent for browning, searing, and everyday cooking. Typically requires oil and preheating. No coating means it’s safe with metal utensils.

• Non-Stick (e.g., Tritanium® Ultra): Coated for easy release and low-fat cooking. Ideal for eggs, pancakes, and fish. Best used with silicone or wooden tools.

• Ceramic (e.g., Ceragan™ Xtra): Naturally slick and toxin-free. Free from PFAS, PFOA, and heavy metals. Great for low-heat cooking, but can wear out faster if overheated.

• Nitrided Cookware: Made through a special nitriding process that hardens the pan surface without coatings. Highly scratch-resistant, metal-safe, and naturally non-stick after seasoning. Excellent for high-heat searing and stir-frying.
Are your non-stick or ceramic coatings safe?
Yes. All La Gourmet cookware coatings are tested and certified PFOA-free, and free from harmful heavy metals like lead or cadmium. We use only internationally approved coatings that are safe for everyday use.
What’s the difference between induction and non-induction cookware?
Induction cookware must have a magnetic base (usually iron or special steel). Look for La Gourmet pans with Magneto™ induction technology or an Autoreflect™ base for fast and even induction heating. Not all aluminum or ceramic cookware works on induction unless specified.

Stainless Steel Cookware

What are the advantages of stainless steel cookware?
Stainless steel is:
• Highly durable and resistant to rust or corrosion
• Great for browning and searing
• Oven-safe and often dishwasher-friendly

It also doesn’t chip or flake since it has no coating.
Why does food stick to my stainless steel pan?
Stainless steel isn’t non-stick by default. To prevent sticking:

• Always preheat the pan before adding oil
• Let oil heat up before adding food
• Avoid moving food too early — once it forms a sear, it will release easily
• Use medium heat; high heat may cause scorching
Why do I see rainbow discoloration or white spots on the surface?
• Rainbow stains are heat tints caused by minerals and high temperatures — harmless and removable with vinegar or a stainless steel cleaner.
• White spots are usually caused by calcium in tap water. You can remove them with a vinegar soak or gentle scrub.
Can I put stainless steel cookware in the dishwasher?
Yes, most are dishwasher-safe. However, hand washing helps preserve the mirror polish and prevents detergent stains. Always dry thoroughly to avoid water spots.
Is stainless steel cookware induction-compatible?
Only if it has a magnetic base. Look for cookware labeled as “induction-compatible” or featuring Magneto™ or Autoreflect™ bases. To test: if a magnet sticks to the bottom, it works on induction.
How do I remove burnt-on food or stubborn stains?
• Soak the pan with hot water and dish soap
• For tough stains, simmer water with vinegar and baking soda inside the pan
• Use a non-abrasive scrubber or stainless steel cleaner for polish

Nitiriding Cookware

What is nitriding cookware?
Nitriding cookware refers to carbon steel or iron-based pans treated with a nitriding process—a high-temperature gas or plasma treatment that diffuses nitrogen into the surface. This creates a hard, corrosion-resistant layer without traditional coatings.
Is nitriding the same as non-stick?
No. Nitriding creates a natural iron surface with a hardened layer. It is not non-stick, but when properly seasoned, it becomes increasingly naturally slick with use—similar to traditional carbon steel or cast iron pans.
Is nitriding cookware compatible with induction?
Yes. It’s suitable for all stovetops, including gas, electric, ceramic, halogen, and induction.
Do I need to season nitriding cookware?
Yes. Like carbon steel or cast iron, nitriding pans must be seasoned with oil to create a non-stick patina. Over time, this makes the pan slicker and improves food release.
How do I season a nitriding pan?
1. Wash the pan with hot water and mild soap (only before first use).
2. Heat the pan and apply a thin layer of high-smoke-point oil (e.g. flaxseed, grapeseed, or canola).
3. Heat until it smokes slightly and darkens.
4. Repeat 2–3 times for better results.
Can I put nitriding cookware in the dishwasher?
No. Always hand wash with warm water and a soft brush or sponge. Avoid soap after initial seasoning, and never soak it in water.
What if my pan rusts?
Rust can occur if the seasoning layer is damaged or the pan is stored damp.
• Scrub the rust with steel wool
• Re-season the pan as per instructions
• Always dry thoroughly and apply a light oil coat before storing
How long does nitriding cookware last?
With proper care and seasoning, it can last a lifetime. The nitrided layer doesn’t wear off like chemical coatings.
